12 oz Irish smoked salmon
4 cups Mesclun salad (mixed field greens)
6 oz goat cheese, divided into fourths
1/2 loaf of cubed day, old French bread

4 Tbsp reserved citrus juices
3 Tbsp extra virgin olive oil
2 Tbsp chopped fresh chives
Salt and pepper, to taste

Directions
Toast bread cubes at 350 degrees F for croutons.

In a small bowl, whisk together the citrus juices and olive oil; season with salt and pepper.
