Pulla

(Finnish Coffee Cake Bread)

2 pkgs. yeast
1/4 c. warm water (105 to 115 degrees)
2 1/2 c. milk
1 1/2 c. sugar
1 tsp. cardamom, crushed
1 c. butter
1 tsp. salt
6 to 8 c. flour
3 eggs
Egg whites (opt.)

Dissolve yeast in warm water. Over medium heat combine milk, sugar, butter and salt. Cool to lukewarm. Stir in 1 cup flour and beat well. Add yeast mixture, eggs and cardamom. Add enough of the remaining flour to make a soft dough and mix well. Turn dough into a greased bowl and cover.

Let rise about 2 hours, until doubled. Punch down dough and let rest 10 minutes. Divide dough into 6 portions and form balls. Roll each ball into a rope. Braid 3 ropes to form a loaf. Repeat process with remaining ropes of dough. Place on baking sheets, brush with egg whites if desired. Bake at 350 degrees for 35 to 40 minutes or until golden.
