Polynesian Chicken Casserole

 

 
 
1 lb. skinless boneless chicken
1/2 med. green pepper, chunks
1/2 med. red bell pepper, chunks
1/2 c. cut celery
1 med. onion, in eighths
1 c. snow pea pods
1 (12 oz.) jar Heinz homestyle mushroom gravy
3 tbsp. soy sauce
1 (8 oz.) can pineapple chunks, drained
1/8 tsp. ginger
Hot cooked rice
 

Cut chicken into strips 1/2 inch wide. Place in a 2 quart casserole. Cover with lid or vented plastic. Microwave on High 4 to 5 minutes. Stir twice. Remove chicken - set aside - discard juices. Combine in casserole green pepper and next 4 ingredients. Cover Microwave on High 4 to 5 minutes until vegetables are tender-crisp. Drain if desired. Combine soy sauce and ginger. Add to vegetables. Add chicken and pineapple. Cover - microwave on High 5 to 6 minutes. Stir twice. Serve over cooked rice. 4 servings. Can be done on stove top.
