STEWED TOMATOES

 

3 tablespoons butter
1 yellow onion, peeled and sliced
6 very ripe large tomatoes, cored and quartered
Basil or oregano to taste (Fresh would be best, but dried will certainly do.)
¼ cup dry white wine
Salt and pepper to taste
 


SERVES 6

In a heavy saucepan melt the butter and saute the onion until clear. Add the remaining ingredients and simmer until the tomatoes are very tender, or to your liking.
