SPINACH MASHED POTATOES
(Pinootti Perunoso)

 

6 medium potatoes, peeled 1 teaspoon salt

1 10-ounce package frozen chopped spinach

½
 to 1 cup hot milk butter

Fluffy mashed potatoes with chopped spinach whipped in are a favorite with children, served hot with an "eye" of butter or with gravy.

Cook the potatoes until tender with the salt in just enough water to cover.
Drain and mash them. Meanwhile put the spinach into another scaucepan, pour the milk over it, and cook over low heat until it is done. Add the spinach-milk mixture to the mashed potatoes and whip until fluffy. Serve immediately.

Serves about 6.
